Hope someone can help me on this.
I got a R610 with 1x E5620 running the free version of ESXi 5.1 U1 (free license activate). I know there is a limit of 8x vCPUs per VMs.
A single VM is running with 8x vCPUs. OS is Windows 2008 R2 SP1 STD with MS SQL 2008 R2. The server is connected to a Dell EQL PS4100xv
Recently, I purchased a R420 with 2x E5-2430 and running the evaluation copy of ESXi 5.1 U1 (60 day trial version)
I can create new VMs with more than 8x vCPUs. I tried creating a VM with 12 vCPUs and it works.
I transferred the VM from the R610 (running the free version) to the new R420 (running 60 day trial).
Problem:
1. I can't add more vCPUs. The limit is still eight (8). Should not I able to add more vCPUs? Since, all features are unlock on the trial version?
2. I created a new VM with more than 8x vCPUs and attached the vmdk file from the existing VM but the VM will not boot anymore.

I also noticed the VM I transferred to the new R420 take around 4 minutes to boot. There is no load on this server and its the only VM running on the machine..
On the old R610 is takes less than a minute for the VM to boot.
Hope someone can advice, why the VM is acting sluggish.

Both Servers have 32 GB of Memory with 2x 146 GB 15K SAS drives @ RAID 1. Only the hyper-visor is installed on the SAS Drives. All VMs run on the EQL with 12x 600 GB 15K SAS.
I did run a hardware diagnostic test on the server and updated all firmware including Life Cycle Controller. The images used for ESXi 5.1 U1 also come from the Dell website.
I also checked the EQL performance via SAN HQ and the load is ok in terms of IOPs, bandwidth, capacity & response time.
By the way I have redundant iSCSI san switch PowerConnect 6224 both running jumbo frame with MPIO enabled on the hosts and storage.
Hope some one can advice what I should do.
